WINEMAKING
The grapes for this wine were grown on selected rows of our own sustainably certified home vineyard. This year the cropping rate was naturally nice and low. However we still thinned the shoots by hand and removed leaves from around the bunches to give the fruit optimum exposure to the sun. The bunches were later hand thinned so that they were nicely spaced on the vine in order to intensify the riesling flavours in the remaining fruit.
On 16th and 18th April nice ripe clean berries were picked by hand. Hand picking allows us to achieve a highly aromatic riesling.
The grapes were whole bunch pressed to obtain clean, pure aroms and flavours. The juice was handled gently and reductively and underwent a cool fermentation in stainless steel using selected yeast strains. The wine was stop fermented at 17 gm/l residual sugar and aged on yeast lees for 2 months adding complexity and texture to the finished wine.

Lord Rutherford Dry Riesling 2007Light Green Colour

This single vineyard dry Riesling was selected from the best rows of our Riesling block on our sustainably certified home vineyard. The vines were hand tended with careful attention to leaf removal. The bunches were hand thinned to the low cropping level of 2.4 tonnes per acre in order to concentrate the fruit flavours and intensify the body of the wine.
In the winery the grapes were gently pressed and the juice handled carefully and reductively so as to retain the lively aromas and flavours. To protect the integrity of the aromatics the fermentation was slow and cool in a stainless steel tank, with a selected yeast strain, until only a trace of residual sugar remained (4gm/L)

The grapes for this wine were estate grown on selected rows of our own sustainably certified vineyards. The cropping rate was naturally low. Shoots were thinned by hand and leaves removed from around the bunches to give the fruit good exposure to the sun. The bunches were thinned by hand to be nicely spaced on the vine in order to intensify the Riesling flavours in the remaining berries.
Ripe clean berries were gently harvested in order to achieve a highly aromatic Riesling.
This wine consists of the first juice to free-run from the press. It was handled gently and reductively and underwent a cool fermentation in stainless steel leaving a balanced residual sugar of 16gm/l. Meanwhile a small portion of pressings juice was fermented in old oak barrels. The wine was matured separately then the two portions blended, adding complexity and texture to the finished wine.
