“This deeply coloured Merlot features aromas of dark plum and blackcurrants. The palate is fruit driven and mouth filling displaying plum and spicy fruitcake characters. Subtle French oak and supple tannins lead into a long generous finish.”
The grapes for this wine were grown in our sustainably certified vineyard on the rows directly in front of the tasting room. In order to ensure that the berries had good exposure to the sun all the leaves were removed from around the bunches by hand. The bunches were then hand thinned prior to ripening to ensure that the remaining grapes were concentrated and fully ripened at picking.
In the winery the grapes were removed from their stems and left cold to soak for a period before fermentation. A warm ferment on the skins with careful cap plunging by hand enabled us to extract optimum varietal colour and flavour. This wine was aged in french oak barriques for thirteen months allowing the tannins and oak to fully integrate with the ripe fruit flavours giving the wine fullness and body.
