“This refined Pinot Gris displays deep aromas of pear and spice. The palate is superbly concentrated and well balanced with rich flavours of pear and lychee. It combines subtle sweetness with balanced acidity and has a long succulent finish.”
The grapes for this wine were picked from Pinot Gris vines planted at our Sturkenboom vineyard in Hope. The vines were cropped very lightly to ensure deep concentration of flavour and body. We very diligently removed all leaves from around the bunches and removed by hand any slow to ripen bunches. This was in order to intensify the Pinot Gris flavours in all the remaining berries. On 28th March the clean ripe bunches were picked by hand. Hand picking allows us to achieve a highly aromatic pinot gris.
The grapes were not destemmed but whole bunch pressed in order to fully capture the pure fruit flavours of the berries. The juice was handled gently and reductively in the winery where it underwent a cool fermentation in stainless steel leaving a balanced 28gm/l of residual sugar.
