“This Pinot Gris is richly scented with floral and spice aromas. The palate is succulent and generous with harmonious concentration of pear and lychee, combined with gentle sweetness, which leads into a long lush finish.”
This wine comes from our new, fully sustainable Sturkenboom vineyard in Hope.
The vines were cropped very lightly to ensure maximum concentration of flavour and body in the wine. We were very diligent in removing leaves from around the bunches. We also hand removed any slow to ripen bunches so as to avoid any unripe or phenolic flavours in the wine. The grapes were hand picked on 30th March. Hand picking allows us to achieve a highly aromatic Pinot Gris.
The grapes were whole bunch pressed to retain optimum varietal characteristics and fruit purity. The juice was handled gently and reductively in the winery and underwent a cool fermentation in stainless steel using selected yeast strains. The wine was stop fermented at 16 gm/l residual sugar and aged on yeast lees for 60 days adding richness and texture to the finished wine.
